I think the point is though, if you don't feel that the meditation is working correctly, then perhaps you need to step back and try smaller meditations just using a single technique.
Looking at what you've written, you are trying to meditate by repeating a mantra, but at the same time you are keeping count of how many times you have said the mantra, or you are trying to count the breaths etc. etc. trying lots of different techniques but not finding satisfaction.
Meditation for a lot of people doesn't just happen straight away, and it can take dedicated practice, sticking at a single technique (unless obviously a technique really doesn't suit you, then of course change to a different one).
You contradict yourself by saying you can meditate for 30 minutes straight, and then you say that your mind is racing etc. etc. Yes, it is perfectly normal for the mind to generate thoughts during meditation, but the fact that you are concerning yourself with those thoughts or watching how they are "racing" means that you are not really getting into a deep meditative state.
The way i mediatate is: I sit an a chair with my back straight and both hands by my knees , thumb touching middle finger and close my eyes, I do not open my eyes , but if i have to yawn i will, if i have an itch i will scratch it, if i want to re postion myself i will, i imagine these things will not affect my meditation.

That's good. As long as you are comfortable. Too many people try and meditate in uncomfortable positions or try and resist scratching those itches etc. but it is perfectly ok to get comfortable and adjust yourself if needed, otherwise they will just serve to distract your meditation.
Polly's suggestion is good... just use the Discover Meditation CD's, start with 5 minutes, and gradually move up the time with the following CD's when you're happy with doing each step.
